Salmon Croquettes

Happy Tuesday everyone, I hope all is well. Hope everyone had a great holiday weekend. I was surrounded by lots of family and full of laughter. My mom also did one of my recipes for me. The next challenge was salmon croquettes. Now for my family this food is usually made at breakfast time. We usually eat it with biscuits, eggs, and buttered rice. Sounds good, I know. My mom did follow most of the directions, lol remember she has been cooking this for a long time. For the croquettes you’ll need a can of pink salmon, eggs, red bell pepper, green onions, and seasoning (salt and pepper). You could also add potatoes to the mixture if that’s your preference. Also white onions could be used instead of green onions. Bread crumbs was one of the book ingredients to make it crunchy. Now if you don’t have any bread crumbs you could also use flour as a replacement, which makes it crunchy as well. I believe the only thing my mom didn’t follow was using bread crumbs; she used flour instead. Preheat the air fryer to about 350, and spray it using cooking spray. Place the croquette’s in the air-fryer and cook them for about 15 mins or until golden brown on each side. Enjoy!! The croquettes turned out amazing as always. This is a must try recipe.
