Today’s challenge was blue cheese stuffed chicken breasts. I wasn’t able to find small nice chicken breast like the picture, but I think it turned out pretty good. My chicken breast was plus size and full of meat. So I started off by cleaning the chicken, and taking off access fat. Then I made my cheese blend. This stuffed chicken was different than what I thought. You don’t actually stuff the chicken. Crazy I know, but it worked. I put the cheese blend between the skin and meat of the chicken breast. Now blue cheese has a very unique taste, so even though the blue cheese is only on the top of the chicken, you do 100% taste the blue cheese throughout the entire chicken breast. I actually thought that was better and made the chicken very moist, and tasty. Then I added the season, and let it cook for about 25 minutes in the air fryer. The air fryer worked amazing by the way. Overall I think I did an amazing job. Again I’m getting my recipes from the air fryer cookbook. One recipe down and 115 more to go.
